How to Make Banana Pancakes From Scratch

You don't need a store bought mix to make pancakes. Homemade banana pancakes are quick, economical and use common pantry ingredients.

Instructions

Things You'll Need:

  • Frying pan
  • Medium and large mixing bowls
  • spatula
  • spoon
  • 1 1/2 cups flour
  • 1/4 cup sugar
  • 1 1/2 cups milk
  • 2 eggs
  • 2 medium bananas
  • baking powder
  • salt
  • vegetable oil
  1. Step 1

    In a large mixing bowl, combine 1 1/2 cups flour, 3 teaspoons baking powder and a pinch of salt. For added fiber, use 1 cup white flour and 1/2 cup whole wheat flour.

  2. Step 2

    In a medium bowl, mash two medium bananas with a fork. Then beat in 1/4 cup sugar, 2 eggs, and 1 1/2 cups milk or soy milk.

  3. Step 3

    Pour wet ingredients into dry ingredients and stir until mixture is just moistened. Lumps are good, so don't over stir.

  4. Step 4

    Heat 1/2 teaspoon vegetable oil in a non-stick skillet on medium-high heat. When oil is hot, use a spoon or soup ladle to scoop batter into skillet. For silver dollar pancakes use a tablespoon to add 3 or 4 pancakes to the skillet at a time. For bigger pancakes, use a soup ladle and make one pancake at a time.

  5. Step 5

    When bubbles form in the center of the pancake, use a spatula to flip and cook for 30 seconds more. Repeat the process until all the batter is gone. Enjoy your banana pancakes while they're hot!

Tips & Warnings
  • You can make endless variations on this basic recipe. Substitute 1 cup of canned pumpkin or 1 cup fresh or thawed frozen berries for the banana or add 1/4 cup mini chocolate chips for a real treat.
