Cast iron pans cook evenly, providing a rich hearty flavor that cannot be matched with lightweight aluminum pans. These pans begin as silver-colored iron pans, but develop a deep rich black as they carbonize with cooking. The layer of carbon creates a superior cooking surface on the pan. With proper care and maintenance, cast iron pans last for generations and are virtually nonstick. Exposure to excessive water and failure to season the pan may result in rust stains. Fortunately, they are easy to remove.

  • Scrub brush Steel wool Vegetable oil
  1. Step 1

    Evaluate the pan for the extent of damage. Rusty spots that disappear when the pan is washed and reappear as it dries are minor and can be removed with a good scrubbing with a kitchen scrubber and hot water. Dish detergent is not necessary and will cause the pan to stick. Rinse any residue clear, wipe with a dry cloth. Place the pan on a burner set to medium high.

  2. Step 2

    Allow all moisture to evaporate. Remove from heat. When the pan is cool to the touch, apply a thin, even coat of vegetable oil. Use a saturated paper towel to coat the insides of the pan. Return the pan to the burner and heat until you see a slight hint of smoke. Turn the burner off and allow the pan to cool while on the burner.

  3. Step 3

    Repeat the procedure each time you wash the pan to keep the surface seasoned and to create a nonstick surface.
