Fried pies contain fillings that can be made from just about anything, such as sweet potatoes. Fried sweet potato pie is fairly inexpensive and simple to make, and it won't take long to finish.       Clean the sweet potatoes. Hold each of the sweet potatoes under cold water and scrub any dirt off the surface. Next, place them into a large pot filled ¾ of the way with water. Turn the burner on high and boil for 30 or 40 minutes or until a fork can easily enter the potatoes. Once done, take the potatoes out of the pan and set aside.

      Mix the ingredients. Put the self-rising flour, 1 cup of granulated sugar and shortening into a bowl and mix together with your hands until coarsely blended. Add a tablespoon of water at a time, kneading until the mixture is a smooth ball of dough. You can use a spoon or fork instead of your hands. Wrap the dough in plastic wrap and refrigerate for 30 minutes.

      Prepare the filling. Let the sweet potatoes cool completely and then remove their skins. Cut into quarters and place in a bowl. Add a tablespoon of butter and the other cup of granulated sugar to the bowl and mash all of it up with a potato masher. You can use an electric blender instead of a potato masher.

      Make the pastry. Sprinkle flour on a hard surface and set the chilled dough on it. Dust your rolling pin with flour and thinly roll out the dough. Place a saucer on the dough and cut around it. Cut out as many circles as you can and then take the dough, reshape it into a ball and roll it out again. Continue doing this until there isn't enough dough to make a saucer-sized circle.

      Fill the pies. Put a tablespoon of the sweet potato filling in the middle of each pastry circle and fold over. Press the tines of a fork all around the edge of the each pie to tightly seal the edges of the pies together.

      Fry the pies. Pour a cup of oil into a heavy skillet and turn the stove to medium heat. Place one or two pies in the skillet to cook until light brown and then flip over. Take out of the skillet when both sides of the pies are light brown. Set them on paper towels to drain the grease. Cook the rest of the pies and lightly dust all of them with powder sugar. Eat while still warm.

  • Be careful when frying the pies as they can overcook quickly.
