How to Make Goat Cheese Chicken Breasts

Since going back to a low carbohydrate lifestyle, I have found myself eating more and more chicken. Although I really love chicken, it can certainly get boring for several nights a week! I have always loved goat cheese, too. Here is one us the Hubby and my new faves.

Difficulty: Easy
Instructions

Things You'll Need:

  • 4 Boneless breasts of chicken
  • 2-3 Oz. Herbed Goat Cheese
  • 1 Red Bell Pepper, sliced into strips
  1. Step 1

    To stuff the chicken, you need to first make a pocket in each chicken breast. Take a sharp knife and slit the fat side of the breast lengthwise carefully. Insert your fingers into the slit and create a pocket.

  2. Step 2

    Slice the goat cheese into pieces and insert them into the pockets in the chicken.

  3. Step 3

    Place these on foil in a pan and lay the red pepper slices over the breasts. Cover this tightly with more foil and bake for 30-35 at 350 degrees F.

  4. Step 4

    Even though this has a vegetable with it, I often serve these breasts with a green vegetable, too, for example asparagus! Enjoy!
