Things You'll Need

  • Muffin pan
  • Cupcake liners
  • Chocolate cake mix
  • 8 oz. cream cheese
  • 1/2 cup sugar
  • 1 egg
  • 6 oz. chocolate chips
  • 1/2 cup shortening
  • 1/2 cup butter
  • 1 tsp. vanilla
  • 2 tbsp. cream
  • 4 cups confectioners' sugar
  • Red food coloring paste
  • Sugar cones
  • Non-dairy whipped topping
  • Pastry bag with decorating tips
  • Assorted candies and sprinkles
  • 1/8-inch ribbon, assorted colors

Instructions

      Prepare the cake mix according to package directions.

      Combine cream cheese, sugar and egg in a separate bowl. Beat well with a mixer.

      Add chocolate chips to the cream cheese mixture and stir with a spoon until well blended.

      Pour the cake batter into cupcake liners, filling each 2/3 full. Drop 1 tsp. of the cream cheese mixture into each cupcake.

      Bake according to the package directions, then allow the cupcakes to cool completely.

      Combine the shortening, butter, vanilla, cream and confectioners' sugar to make the frosting. Blend these ingredients for at least two minutes with a mixer.

      Add a small amount of red food coloring paste, and distribute the color evenly. Add paste and mix well until you obtain the desired shade of pink.

      Place the sugar cones on a cookie sheet, with the pointed end up, and fill a pastry bag with softened non-dairy whipped topping.

      Adorn the hats with the candies, using the non-dairy whipped topping as "glue."

      Cut the ribbon into 4-inch lengths, and insert 1 inch of the ribbon into the tip of the cone.

Tips & Warnings

  • Allow party guests to decorate their own princess hats before placing them on top of the cupcake.

  • Don't frost the cupcakes before they are completely cooled. If cupcakes are so much as slightly warm, the butter cream frosting will melt off.
