Princess Cupcake Recipe for a Kid's Birthday Party

  1. Step 1

Prepare cake mix in a large bowl, according to package directions.

  2. Step 2

Combine cream cheese, sugar and egg in a separate bowl. Beat well with a mixer.

  3. Step 3

Add chocolate chips to the cream cheese mixture and stir with a spoon until well blended.

  4. Step 4

Pour cake batter into cupcake liners, filling each 2/3 full. Drop one teaspoon of the cream cheese mixture into each cupcake. Bake according to package directions.

  5. Step 5

Make frosting by combining the shortening, butter, vanilla, cream and confectioner's sugar. Using a mixer, blend ingredients for at least 2 minutes.

  6. Step 6

Color the frosting. Starting with a small amount of red food coloring paste, distribute color evenly and continue adding until you obtain the desired shade of pink. After cupcakes cool completely, top each with an abundant amount of frosting.

  7. Step 7

Decorate princess hats. Place sugar cones on a cookie sheet, with the pointed end up. Fill pastry bag with softened Cool Whip. Use the Cool Whip as the "glue" to adhere candy decorations to cone. The candies will be the adornments of the hat.

  8. Step 8

Cut ribbon into 4-inch lengths. Insert 1 inch of the ribbon into the tip of the cone.

Tips & Warnings
  • Allow party guests to decorate their own princess hat prior to placing them on top of the cupcake.
  • Don't frost the cupcakes before they are completely cooled. If cupcakes are so much as slightly warm, the butter cream frosting will melt off.
