Instructions

      Cut the tops off of ¾ cup of fresh, ripe strawberries. Mash the berries well with a fork or potato masher to create about ½ cup and drain well.

      Combine one 8 oz. package of cream cheese and one stick (8 tbsp.) of butter in a medium mixing bowl. Cream the ingredients together using an electric mixer on low speed for about 30 seconds.

      Stop the mixer. Add 3 ½ cups confectioners' sugar and mashed strawberries. Blend it on low until the sugar has been thoroughly incorporated.

      Raise the mixer speed to medium. Beat the mixture for an additional 1 to 2 minutes, or until the strawberry cake icing is light, fluffy and well-combined. Add 2 drops red food coloring, if desired, and mix thoroughly.

      Add ½ cup thawed, grated coconut and ½ cup chopped pecans. Fold in the ingredients using a rubber spatula until the icing is thoroughly incorporated.

      Refrigerate the icing for at least 20 minutes to allow it to set.

Tips & Warnings

  • The coconut and pecans can be left out of the recipe if they are unavailable. Serve this homemade strawberry cake icing on cakes, cupcakes, or brownies. You can apply the icing after it is completed and then place the cake in the refrigerator. The icing will set on the cake. If you plan to use it later, refrigerate it immediately.
