True BBQ ribs take hours of cooking and smoking over indirect heat, but if you have a small grill, this can be difficult to achieve. Too much direct heat can make the ribs tough and easily burn the outside. There are shortcuts you can take for perfectly grilled ribs with a delicious BBQ flavor, even if you have a small kettle or gas grill.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Pork baby back ribs Dry barbecue spice rub Plastic wrap Heavy duty aluminum foil Tongs Barbecue sauce Liquid smoke Silicone basting brush
  1. Step 1

Sprinkle the ribs liberally with a dry barbecue spice rub. Rubs are generally available at supermarkets in the spice section. Rub the spices into the meat. Wrap the ribs in plastic and place them in the refrigerator for at least six hours, or up to two days before grilling.

  2. Step 2

Pre-heat the oven to 225 degrees Fahrenheit.

  3. Step 3

Remove your ribs from the plastic and place them in a piece of heavy duty aluminum foil.

  4. Step 4

Fold the foil into a pouch to seal in the ribs. Place the pouch into the oven. Par-baking the ribs will help the ribs become tender and retain moisture.

  5. Step 5

Bake the ribs for approximately 2 1/2 to 3 hours, until the meat is tender and pulls easily away from the bone.

  6. Step 6

As the ribs are finishing the par-baking process, prepare your grill. Clean your grill grate and give it a light coating of vegetable oil with a paper towel. Ignite your coals and let them burn until they are steadily glowing. Then spread them evenly over the bottom of the grill. If you are using a gas grill, turn it on to medium heat.

  7. Step 7

Remove your ribs from the foil and place them on the grill, meaty side down first. Turn them over in five minutes with tongs and cook for five more minutes.

  8. Step 8

Brush your favorite store-bought or home-made BBQ sauce over the meaty side of the ribs. If you want your ribs to have a more traditional smokey flavor, whisk just a few drops of liquid smoke into the sauce before brushing onto the ribs. Turn them over again, meaty-side down, and let them cook for approximately five more minutes until the sauce begins to caramelize.

  9. Step 9

Brush more sauce on the back side of the ribs, turn them over for another few minutes until the sauce on that side begins to caramelize. Plate your ribs and serve.
