Things You'll Need:
- 2 medium size onions, diced
- 3 tbsp of extra virgin olive oil
- 1.8 quarts of chicken broth
- 1/2 lb of red lentils
- 1/4 lb of white rice
- Ground black pepper to taste
- 2 tsp coriander
- 1 tsp cumin
- 2 lemons, sliced
- Salt to taste

Step 1
Saute the onions in extra virgin olive oil for a few minutes. Then, lower the heat and cover the pan and let sit until the onions are wilted. Then remove the lid, turn the heat up to around 7 (between medium and high heat) and let the onions turn a caramel color.

In a separate pot, boil the broth and add the red lentils and the rice. Add in the ground black pepper and the coriander and let cook for approximately 40 minutes or until the lentils and rice are cooked.

Add salt to taste. Be careful not to add too much salt as salt might have been added to the broth unless you prepared your broth at home like I do.

Depending on your preference, you may add on some more boiled water, if you like your soup less dense.

Serve with cumin and lemon slices. I squeeze the lemons right into my bowl. The soup tastes much better with the lemon juice. Enjoy!!
