Things You'll Need:
- 8 Slices of Bread
- 1 T Butter or Margarine
- 1 C Shredded Cheddar and Monterey Jack Cheese
- 4 Eggs
- 2 Slices Bacon, Cooked and Crumbled

Step 1
Preheat oven to 425 degrees.

Step 2
Cut a hole in center of each of 4 of the bread slices, using 1 ½ inch cookie cutter or rim of drinking glass. Remove bread circles. Discard or save for another use.

Step 3
Spread remaining bread slices with butter or margarine. Place, buttered side down, in baking dish or cookie sheet; sprinkle with 1/2 cup cheese. Top with cut-out bread slices to make four sandwiches.

Step 4
Break 1 egg into each hole. Sprinkle with remaining 1/2 cup cheese and the crumbled bacon.

Step 5
Bake 15 to 20 min. or until cheese is melted and eggs are set.

Step 6
Serve as sandwiches or as an accompaniment to pancakes and hash browns.

on 3/23/2009 We would make these for breakfast as kiddos. We used a glass rim to cut the hole out and then buttered and oven-toasted the circle instead of discarding...Had no idea they were called Toad in the Hole. Great name! Thanks for reminding me so I can show my kids!
