How to Prepare and Cut a Fresh Mango

A mango contains more than 20 different vitamins and minerals, according to the National Mango Board. Among these are vitamins A and C, both antioxidants. Additionally, mangoes are a good source of fiber. Learning to cut a mango takes a little practice, but it’s not hard. Select one that is ripe and gives just slightly when you press a finger against the fruit.

      Stand the mango up on its end on a cutting board. Every mango is different, but often the pit runs across the widest part of the top of the mango. Once you think you know where the pit is, gently slice down one side of the mango. If you feel your knife cutting into the pit, move your knife over slightly and try again. Do the same on the other side of the pit. You will end up with three slices -- two side slices and one center slice containing the pit.

      Place the center piece of mango flat on your cutting board. Insert the tip of your knife as close to the skin as possible and cut around the skin. Once you remove the skin, cut off any chunks of mango that are attached to the skin or pit.

      Lay one of the side slices on the cutting board, skin side down, and score vertical and horizontal cuts across your mango. Do not to cut through the skin. The result will be mango cubes still attached to the skin. Turn the skin inside out, so the cubes are poking out like a porcupine. Gently cut the mango cubes away from the skin. Repeat with your other side piece of mango.
