How to Make Cajun Beignets

Beignets are to be enjoyed fresh and for any occasion. I live in South Louisiana, in what we call Cajun Country. Both sides of my family are Cajun or Acadianas. This recipe comes from my French Cajun teacher in the fifth grade.

Instructions

Things You'll Need:

  • 1 egg
  • 2 cups of flour
  • 1 cup of water
  • 1/2 teaspoon of salt
  • 1 teaspoon of baking powder
  • 2 teaspoons of sugar
  1. Step 1

    Mix the dry ingredients together then add the wet ingredients. Blend the mixture till you have the thickness of pancake batter. You should be able to turn the spoon over without it falling right out.

  2. Step 2

    If it is too dry add a little water, it is too mushy, add some flour a little bit at a time.

  3. Step 3

    Drop by the spoonfuls into hot grease/oil. This way the beignets will become all different types of shapes. It is like looking at the clouds, we love to see what they will look like. It will not look like the square beignets, unless you flattened the dough, dust the dough with flour and cut into squares. This is the also the recipe my grandmother makes. She speaks fluent Cajun French.

  4. Step 4

    The beignets will usually flip themselves when they are done on that side, if not flip them when they are golden brown on one side.

  5. Step 5

    After they are done, put on a plate with paper towels to drain the oil. Then after they are finished draining, roll in a bowl or shake in a bag the beignet in powdered sugar. Serve immediately. They taste best warm with some coffee or milk. It is a fast family favorite.

Tips & Warnings
  • Make sure the insides are done, in the first batch, if not put them back in the grease.
  • Watch the grease around small children.
