Things You'll Need:
- 1 traditional flavor store bought pre-cooked rotisserie chicken
- 1 pkg japenese curly noodles
- 1-3 TBS Bertolli olive oil
- 1/3 yellow onion; chopped
- 2 tsp or 2 cloves minced garlic
- 1 TBS Lawry's poultry seasoning
- 2 cans Swansons chicken broth
- water
- 1-2 tsp McCormick dried rosemary
- 1-2 tsp McCormick dried thyme
- 1-2 tsp McCormick dried basil
- 1-2 tsp McCormick dried oregano
- 1 1/2 cups pre-shredded carrots; cut up
- salt and pepper
- 1 MSG free chicken boullion cube if needed
-
Step 1
Cook noodles according to package directions...drain. Add to broth when done.
-
Step 2
Pour the Swanson's chicken broth plus 3 cups of water into a large pot or dutch oven. Add rosemary, thyme, basil and oregano. Sprinkle desired amount of salt and pepper. Let simmer.
-
Step 3
Take the meat off the rotisserie chicken and tear into pieces. In a large saucepan over medium heat add 1 to 2 TB olive oil. Saute onion and garlic in oil until the onion starts to become transparent, add the chicken. Sprinkle with poultry seasoning. Cook and stir for a few minutes.
-
Step 4
While meat is cooking cut the shredded carrots so the pieces aren't so long and add to chicken broth.
-
Step 5
Add chicken to broth. Then add enough water to the pot to make desired amount of broth in the soup. We like alot of broth in our soup. Let simmer for a few minutes then taste test the broth. Add more herbs, salt and pepper if needed. If the broth doesn't have enough chicken flavor, then add an MSG free chicken boullion cube. A good soup has to have a good broth.
-
Step 6
Let simmer for a bit then serve with garlic bread. Enjoy yourself a comforting, steaming bowl of homemade chicken noodle soup. Mmmmmm...
