How to Make a Favorite, Easy, Spicy Chicken Dish

Chicken is a great go-to option for dinner any night of the week. For this spicy version, you can make a batch of the seasoned rub ahead of time and store it in an airtight container for even faster prep.   • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ground red pepper, or to taste

  • 4 to 6 boneless, skinless, split chicken breasts
  • 2 to 3 cans tomatoes with green chilies

      Measure and mix all the spices into a small bowl. The amounts listed are for 4 to 6 breasts, and can be adjusted for more or less chicken. You can also make a bigger batch and store the extra for later meals. If your family doesn't like too much spice, reduce the amount of ground red pepper.

      Coat a large nonstick skillet with cooking spray. Rub each side of the chicken breasts with the spice mixture. Cook the chicken on medium-high until just brown.

      Pour at least 2 cans of tomatoes with green chilies over the chicken and reduce heat to medium. Simmer 30 to 40 minutes, or until chicken is cooked through.
