Bake a Flourless Hazelnut Cake

Mmmh, chocolate and hazelnuts, an absolutely devilish combination! This recipe omits any flour at all, so it is chock-full of the goodness of hazelnuts and the temptation of chocolate. Who could resist, especially since this is easy to make and easy to enjoy!

Instructions

Things You'll Need:

  • a 12inch spring cake form
  • oven
  • mixer
  • ingredients on shopping list
  1. Step 1
     

    10 eggs
    11 oz. sugar
    1 lb. ground hazelnuts (Whole Foods stores have a great selection of nuts)
    peel of 1 lemon, grated
    1 stick unsalted butter
    1 cup heavy cream
    3 tbsp. cocoa
    1 tsp. rum
    24 whole hazelnuts
    2 100g semi sweet chocolate bars (Lindt, etc.)

  2. Step 2
     

    Separate eggs. Beat in a mixer the yolks and sugar, until foamy.

  3. Step 3
     

    Add in the ground hazelnuts and the grated lemon peel.

  4. Step 4

    Beat egg whites until stiff and carefully fold into the mixture. Don't over mix.

  5. Step 5

    Butter and flour a 12 inch spring form and fill with the dough.

  6. Step 6

    Bake in a 350 degree oven for 1 hour and 15 minutes. After taking cake out of oven let cool thoroughly

  7. Step 7

    In the meantime, melt chocolate in a double boiler until soft enough to brush on the cake. Cover top and sides.

  8. Step 8

    Whip cream until very stiff, mix in cocoa and rum.

  9. Step 9
     

    Use a pastry bag to make 24 star dots on the outside perimeter of the cake, about 1 inch diameter each. Top each dot with 1 whole hazelnut.

Tips & Warnings
  • Enjoy this cake as much as I do. But then again I am nuts about chocolate!
