Things You'll Need:
- Whole Chicken
- Water
- 3 large Carrots
- 1 large onion
- 1/2 stalk of celery
- 1 sprig of Thyme
- 2 Bay leaves
- 1/2 cup parsley
- Pepper and salt to taste

Step 1
In a Large stock pot place your whole chicken, chopped vegetables and fresh herbs. Then fill with water until it covers the entire chicken. Make sure your pot is large enough to avoid overflow and spoils.

Next, cook on medium heat for at least an hour and one half or until chicken is completely cooked. You will notice that the meat has pulled away from the bones.

Next, carefully remove the chicken, vegetables and herbs from the broth. Let sit until cooled.

Once cooled, place in the refrigerator to harden. After a couple of hours the fat should have risen to the top. If so, carefully skim the top layer of fat off with a large spoon.

Seal it in an air tight container and store until ready to use.
