Beets are hardly the most versatile vegetable to crop up from the ground, but if you turn them into a salad such as the one I’m going to tell you how to make, that won’t matter. Once you taste this beet and feta cheese salad, you may just decide to lay your search for new and exciting ways to make beets to rest. Here’s how to make a mouth-watering salad sure to please your taste buds.

Instructions

Things You'll Need:

  • An oven
  • A roasting pan
  • A medium size bowl
  • 3 medium size beets
  • 3 ounces of feta cheese (or more, if desired)
  • 1 slice of red onion, chopped
  • 3 tablespoons of extra-virgin olive oil (or more, if desired)
  • 3 tablespoons of balsamic vinegar (or more, if desired)
  1. Step 1

    Wash beets thoroughly, then dry them and place them in a roasting pan.

  2. Step 2

    Roast beets in the oven at 400 degrees until fork tender.

  3. Step 3

    Let beets cool, and then cut them into bite-size cubes.

  4. Step 4

    Put beets in a bowl, and crumble the feta cheese on top of the beets.

  5. Step 5

    Add the chopped red onion.

  6. Step 6

    Drizzle the extra-virgin olive oil over the beets and feta cheese.

  7. Step 7

    Add the balsamic vinegar.

  8. Step 8

    Mix beets, feta cheese, red onions, olive oil and balsamic vinegar well.

  9. Step 9

    Chill and serve.
