Things You'll Need:
- 3 tbsp extra virgin olive oil
- 3 tbsp white flour
- 2 tbsp tomato paste
- 5 medium tomatoes, crushed
- 5 cups of water
- 2 cups of milk
- Salt to taste
- Shredded mozzarella
- Spring onions, diced

Step 1
Mix the olive oil and flour in a warm pot over medium heat and stir until you can smell the flour and the mixture turns brownish.

Add in the tomato paste and the crushed tomatoes. Run a hand blender through the mixture. This will help achieve that creamy texture.

Add the water in and keep over medium heat, stirring constantly until the mixture thickens.

Heat the milk to a temperature warmer than room temperature.

Take a ladle of the tomato mixture and mix it in to the heated milk and then add this mixture back into the pot.

Step 6
Add salt to taste, let come to another boil and remove from the heat.

I prefer serving tomato soup with shredded mozzarella cheese and spring onions. If you like it with some cream on top, you can serve it that way as well. Gourmet bread and a side salad will turn your soup into a meal.
