Things You'll Need:
- George Foreman Grill or Grill Pan
- 2 Chicken Breasts
- Salt
- Pepper
- Italian Seasoning
- Salad Mix of your choice
- Salad Dressing of your choice
- Optional, but yummy: feta or goat cheese, pomegranate seeds, walnuts, sliced pears, dried cranberries

Step 1
Gather your ingredients. I usually pick up a bag of pre-mixed salad at my local grocery store; it's ready made and easy. Pick your favorite!

Rinse the chicken and pat dry. Then season both sides with salt, pepper and Italian seasoning.

Place chicken on your hot Foreman grill and cook it for about 4 - 7 minutes, depending on the thickness. A rule of thumb is to cook it until it's no longer pink on the inside and the juices run clear. Note, if you're using a grill pan on your stove, you're going to have to turn the chicken over mid-way through cooking time.

When cooked, remove the chicken and let it rest for about one or two minutes. While resting, open your ready made salad and put it on a plate.

Then add the goodies on the salad: pomegranate seeds, feta cheese and walnuts for the extra anti-oxidant power and omega-3 oil. (Add variety depending on taste!)

Now, slice the chicken in strips. Layer it over the salad. Add a low calorie salad dressing for a healthy choice and enjoy!
