  • 1 c. shredded coconut
  • 1 tsp. vanilla
  • 1 c. crushed pineapple, drained
  • 3 tbsp. flour
  • 6 tbsp. butter, melted
  • 1 1/2 c. sugar
  • 1 unbaked 9-inch pie crust
  • Aluminum foil

Instructions

      Preheat the oven to 350 degrees F.

      Beat the eggs until they are thick but not too fluffy. Stir in the flour, sugar, vanilla, coconut, half of the butter and the crushed pineapple. Mix well.

      Place aluminum foil (or a pie crust shield) around the edges of the crust to keep it from burning.

      Pour the mixture into the pie crust and drizzle the remaining butter on top of the pie.

      Bake at 350 for about 45 to 50 minutes or until the top is firm.

      Let the pie cool and solidify for a few minutes; serve warm.

Tips & Warnings

  • Decorate with Maraschino cherries or a layer of pineapples if you like for a festive presentation.
