The best part of having afternoon tea, aside from the tea itself, is eating warm tea scones with clotted cream, strawberry preserves and lemon curd. I enjoy baking them from scratch and am always creating new ones to serve at tea parties I host. Recently, as I was rummaging through my baking cabinet to look for a new way of making scones, the idea popped into my mind to try peach scones. The result was delicious! Here is the recipe for your enjoyment.

Instructions

Things You'll Need:

  • 2 cups flour
  • 4 tsp baking powder
  • ½ tsp salt
  • ½ tsp cream of tartar
  • ½ tsp ground cinnamon
  • 2 tbsp sugar
  • ½ stick butter-flavored Crisco Sticks
  • ½ to ¾ cup diced peaches
  • ¼ cup heavy cream
  • Sifter
  • Clean Pastry cloth
  • Measuring cups & spoons
  • Pastry cutter
  • Oblong glass baking pan
  • Mixing bowl
  1. Step 1

    Preheat oven to 450 degrees. Place all dry ingredients into a sifter and sift two times onto a clean pastry cloth. Sift one last time but directly into the mixing bowl.

  2. Step 2

    Cut the Crisco into small chunks into the bowl and blend into the flour with a pastry cutter until the mixture looks like small peas or coarse crumbs.

    Drain the diced peaches and pour into the mixture. Stir with a fork until dough starts to form. Add heavy cream a bit at a time while continuing to stir until mixture is at the desired consistency.

  4. Step 4

    Wash hands and dry thoroughly. Sprinkle flour over hands and form the tea scones by making the dough into small balls. Continue to sprinkle flour over hands when dough gets too sticky.

    Place tea scones in an ungreased glass baking pan and bake for 15-20 minutes or until scones are golden brown. Makes 12-14 tea scones.
