Do you have a craving for Beef enchiladas? Here is a recipe for Authentic Mexican Beef Enchiladas.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Oil
  • Flour
  • Chili Powder
  • Cumin
  • Garlic Powder
  • Salt
  • Pitcher of Cold Water
  • 1 Log of Ground Beef (Lean)
  • Corn Tortillas
  • 1 brick of Cheddar Cheese or a big bag of pre-shredded cheese
  • Sour Cream and Salsa
  1. Step 1

    Preheat oven to 375 degrees.

  2. Step 2

    In a big skillet brown your ground beef on med-hi until thoroughly cooked. Drain the grease and set a side.

  3. Step 3

    In a big pot cover the bottom with cooking oil over Med-Hi heat until hot. (Test: drop a pinch of flour into the oil ,if its sizzles then its ready)Take about 1 1/2 to 2 cups of flour and add to oil. The more flour you add the more mole you make. Stir very fast til flour is browned. Add cold water slowly, keep stirring. Add water until mixture is at a desired consistency.

  4. Step 4

    Now here is the tricky part, the mole. My grandma never gave exact me measurements for the spices! Add chili powder first then cumin, garlic powder, and salt. Just add until desired taste. Lower heat to med-low and let sit.

  5. Step 5

    In a medium pan heat up corn tortillas on both side(no oil). This will allow them to absorb the mole.

  6. Step 6

    The assembly: Dip corn tortillas in mole and cover both side. Lay flat on a plate, add hamburger and shredded cheese. Roll and place in a 9 x 13 dish. Repeat until dish is full. Pour extra mole on top of enchilada and top with shredded cheese.

  7. Step 7

    Place in oven for about 20-25 min. Let cool. Serve, add sour cream and salsa if desired. Enjoy!

Tips & Warnings
  • Spices are added to desired taste.
  • Shred your cheese before cooking or buy a big bag of pre-shredded cheese.
  • You can also us chicken or shredded pork.
