Fresh Blueberries signal that Summer is here, and that means picnics, parties and back yard barbecues. Take along a super easy to make cake that will WOW everyone and is sure to be a crowd pleaser!

This is one of my favorite recipes jotted down from a co-worker, now retired. I prefer to use the standard cake recipe rather than the box mix that was originally called for.

The Blueberry apple glaze is what makes this cake extra special. Use your imagination to decorate!

Instructions

Things You'll Need:

  • To Make Cake:
  • 3 c. all purpose flour, sifted
  • 1/4 Tsp. salt
  • 3 Tsp. baking powder
  • 2/3 c. butter
  • 1 c. granulated sugar, divided
  • 1 tsp. vanilla extract
  • 1 c. cold water
  • 4 egg whites
  • Topping:
  • 1 pkg (8 oz) cream cheese
  • 3 Tbl. milk
  • 2 Tbl. granulated sugar
  • 1 Tsp. vanilla extract
  • 1 jar (4 oz) apple jelly
  • 1 pint fresh blueberries, washed and drained
  • 1 c. heavy cream, whipped (or Cool Whip)
  • 2 Tbl. granulated sugar
  1. Step 1

    Preheat oven to 350. Sift flour, salt and baking powder twice.

  2. Step 2

    Cream butter and 3/4 cup sugar. Add vanilla to cold water. Alternately combine water and flour mixtures with butter mixture; mix well after each addition.

  3. Step 3

    Beat egg whites until stiff, then beat in remaining sugar. Fold the egg whites into batter mixture. Bake in oven 30 minutes or until toothpick is clean. Let cool completely. Prepare topping.

  4. Step 4

    Beat cream cheese with milk, sugar and vanilla until of spreading consistency. Spread evenly over cooled cake.

  5. Step 5

    Glaze: Melt apple jelly in saucepan over low heat. When completely melted, remove from heat.

  6. Step 6

    Clean berries, remove stems and add to jelly, tossing lightly until well coated. Be careful not to crush the berries. Distribute evenly over cream cheese.

  7. Step 7

    Decorate and frost as desired: Cover entire cake with whipped cream or Cool Whip. Optional - Cream can be sweetened with granulated sugar.

Tips & Warnings
  • Box cake mix can be substituted for from scratch recipe
  • Use either two 9-inch rounds or one oblong baking pan
  • Try using combination of blueberries and strawberries in the glaze to make a 4th of July Cake
