Ham is a very versatile meal, and usually there's plenty of leftovers to use for another night. One of my favorite ways to stretch a meal is to make a Ham and Spaghetti Skillet Casserole.

My mother-in-law was Irish, and didn't get the opportunity to eat traditional Italian spaghetti. Our family called her version "Irish Spaghetti."

This skillet casserole can be easily prepared in a jiffy. It can be made out of leftover ham or a ham steak, requires relatively few ingredients, and can be adjusted to suit your family's taste.

Instructions

Things You'll Need:

  • 1 or 2 cups ham, or 1 ham steak cut into small cubes
  • 2 cans (16 oz.) stewed tomatoes (or 1 can stewed tomatoes, 1 can regular tomato sauce)
  • 1 large green pepper, seeded and cut into cubes
  • 2-3 Tbl. cooking oil
  • 1 lb. cooked spaghetti, drained
  • salt and pepper to taste
  • Parmesan cheese
  1. Step 1

    In a large sided frying pan, add oil and heat. Add diced ham and saute until light brown.

  2. Step 2

    Add diced peppers and saute until tender.

  3. Step 3

    Reduce heat and add stewed tomatoes, (including the juice).

  4. Step 4

    In a large pot, boil spaghetti until cooked. Drain and add to ham, peppers and stewed tomato mixture. Add salt, pepper and Parmesan cheese to taste.

Tips & Warnings
  • Sliced mushrooms, optional
  • Can be reheated. Add additional liquid if necessary (A small can of Tomato Juice works well)
