Cooking barbecued ribs is so simple in a pressure cooker or canner. The ribs cook in almost no time, and they will be tender in much less time than it takes to cook them in the oven or crock pot. Pressure cookers make life easy for cooks because they cook so quickly and meats in particular are moist and tender in a third of the time it takes to cook them conventionally.

Things You'll Need:

  • Pressure cooker or canner
  • Barbecue sauce of your choice
  1. Step 1

    Add 1 tablespoon of cooking oil to the pressure canner or cooker and heat the pan. If you are using a full size pressure cooker, you will need about 2 tablespoons of oil.

  2. Step 2

    Cut the ribs into serving size pieces and brown on all sides. The process of browning them lends so much flavor. When meat is browned, it caramelizes and the flavor will deepen considerably. If there isn't room for all the ribs in the pressure canner, do this step in batches, removing the browned ones and putting them on a plate until all the ribs have been browned.

  3. Step 3

    Put the rack in the pressure cooker and add the ribs. All pressure cookers need liquid and the amount you add will depend on the size of your pressure canner. Most pressure cookers require enough liquid to at least reach the bottom of the rack. Your choice of liquid can be barbecue sauce, thinned with some water so it will not stick to the bottom of the pan, or simply water if you want to finish the ribs on the grill after they have been precooked. If you're not sure about what your pressure cooker requirements are, it's helpful to read the instruction manual that came with it.

  4. Step 4

    Put the pressure canner's lid on and seal the pressure cooker according to the instructions. Bring it up to pressure and let the ribs cook for 30 minutes if you are using 10 pounds of pressure or 15 minutes if you are using a pressure canner that cooks at 15 pounds.

  5. Step 5

    Remove the pressure cooker from the heat after the time is up and let the cooker lose pressure naturally, or by running cold water over the top. Open the cooker and remove the ribs to a plate or take to the grill if you want to finish them over coals or flame. If the ribs are not tender enough, put the lid back on and pressure cook for 5 more minutes.

Tips & Warnings
  • Cook down the sauce if it is too thin by turning the heat back on and putting the pressure cooker back on the stove, then leave the pan uncovered. Stir often so the sauce does not stick to the bottom of the pan.
