Baked beans are a traditional food in the United States. Although they can be found in the canned foods section of the supermarket, many people prefer the homemade taste of slow cooker baked beans. Homemade beans are much tangier and can be suited to individual tastes. Use this easy recipe to make your own slow cooker baked beans.

From Quick Guide: Easy Crock Pot Recipes
Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Skillet
  • 1 large onion
  • ½ pound bacon
  • Nonstick cooking spray
  • 1 pound dried navy beans
  • 1 (14 oz.) can tomato sauce
  • ½ cup ketchup
  • ½ cup molasses
  • 2 tbsp. red wine vinegar
  • ½ cup brown sugar
  • 1 tbsp. mustard powder
  • 2 tsp. cayenne pepper
  • Salt and pepper to taste
  1. Step 1

Dice the bacon and onion into small pieces. Heat a medium skillet over medium heat. Cook until the onion is tender and bacon is cooked through but not crisp.

  2. Step 2

Spray the inside of the slow cooker with nonstick cooking spray. Add the dried beans, tomato sauce, ketchup, molasses, red wine vinegar and brown sugar.

  3. Step 3

Add 1 cup of water, bacon and onion to the slow cooker. Stir to combine all ingredients. Place the lid on the cooker and turn the heat to low.

  4. Step 4

Cook the baked beans for up to 8 hours. Add more water during the last few hours of cooking time, if necessary.

  5. Step 5

Add mustard powder, cayenne pepper, salt and pepper after the beans have cooked for 4 hours. Check every hour after this and add more seasoning and/or water as necessary. Serve hot.

Tips & Warnings
  • If you want more of a kick, add some chopped jalapeño or chili peppers in the slow cooker with the other ingredients. Or, if you like your baked beans milder, you can leave out the cayenne pepper. If navy beans are not available, any dried white beans may be substituted.
  • Do not turn the slow cooker temperature above low. Cooking the beans quickly or on a high temperature will result in mushy beans that haven't had a chance to absorb any flavor.
