Flip the latch until it closes fully. This will secure the base inside the ring making a complete cake pan.

Cover the bottom and sides of the pan with a sheet of aluminum foil. This will prevent any leakage of the cake mixture while it is cooking in the oven. Alternatively, you can place the pan on a cookie sheet before filling and placing the pan in the oven.

Tips & Warnings

  • After you put the pan together, hold it up to the light. If you can see light coming through the edges between the bottom and the sides of the pan, you will definitely need to use aluminum foil on the outside to keep the cake from leaking. Spray the inside of the pan with vegetable spray to keep the cake from sticking to the sides or bottom. You can also brush with butter, shortening or lard for the same purpose. Springform pans can be made of aluminum or stainless steel. They are also available with non-stick coating. Springform pans can range in price from inexpensive to very pricey. Buy the one that serves your budget and needs best.
