How to Make Brussels Sprouts with Lardons (Bacon/Pancetta)

Chou Bruxelles (Brussels Sprouts) are a popular ingredient in French cuisine. They are quite versatile, complementing most meat dishes. In this recipe, the Brussels Sprouts are cooked in a little rendered bacon grease, simmered in chicken broth, and sprinkled with bacon.

This recipe yields 4 servings with a preparation and cooking time totaling 30 minutes.

Instructions

Things You'll Need:

  • 1lb Brussels Sprouts
  • 5 slices of bacon
  • 1 cup chicken broth
  • Salt and pepper
  1. Step 1

    Place bacon or pancetta in a skillet over medium high heat. Cook until crisp, then remove from skillet and place on a paper towel lined plate.

  2. Step 2

    Wash, trim, and half Brussels Sprouts. Place in skillet on top of rendered bacon grease. Cook for 2 minutes over medium low.

  3. Step 3

    Pour chicken broth in skillet. Bring broth to a boil and immediately reduce heat to medium low, and simmer for 10-12 minutes. Broth should all be absorbed, and Brussels Sprouts fork tender. Salt and pepper to your taste. (Just a pinch.)

  4. Step 4

    Crumple bacon strips into skillet and stir to mix evenly. Serve immediately. Bon Apétit!

Tips & Warnings
  • If you do not have enough chicken broth, you can always substitute water.
  • If the 1 cup of chicken broth is not enough do not hesitate to add more to your skillet.
