In my plans to visit a nearby apple orchard and bring home a nice bounty from their harvest, I am thinking about all the yummy apple recipes I get to dig out. This recipe (though modified for the better) was my parents’ favorite when they were first married, as well as mine and my husband’s during our early years. I think we all made it so much that we burned out, but it’s been a long enough respite for my taste buds, and now they miss it. Oh, and by the way, it’s pronounced “Apple Koo-ken” in case you were wondering.

Instructions

Things You'll Need:

  • 1 box yellow cake mix (an organic choice is always preferred)
  • 1/2 cup melted butter or expeller pressed coconut oil (expeller pressed doesn’t taste like coconut)
  • 1 can pie sliced apples, drained, or prepare your own apple pie apples
  • 1/2 cup sugar (I use organic evaporated cane juice)
  • 1 teaspoon cinnamon
  • 1 cup sour cream or crème fraiche
  • 1 egg
  • 1 9x13 rectangular casserole pan
  1. Step 1

    Combine cake mix and butter and press into 9×11 pan, building sides up slightly. Bake 10 minutes at 350 degrees.

  2. Step 2

    Arrange apples on warm crust.

  3. Step 3

    Mix sugar and cinnamon together and sprinkle on top.

  4. Step 4

    Whisk together sour cream and egg and drizzle over top (won’t completely cover apples).

    Bake at 350 degrees for 25 minutes or until slightly browned. Do not over bake! Serve warm and refrigerate leftovers.

Tips & Warnings
  • It's a lot easier to get out of the pan when it's still a little warm, so you just might want to eat it all before it's chilled to save you all the hassle...
