Things You'll Need:
- bone in chicken breast you want pieces that have a large amount of the breast bone intact if the bone is a sliver or absent the piece of breast will not work for this recipe. You have to be very choos
- stick butter
- flour
- 3 eggs
- small amount of milk
- poultry season mix
- garlic powder
- onion powder
- paprika

Step 1
You really have to be picky about the individual chicken breast you use for this recipe. It has to have the majority of the breast bone intact or it simply will not hold the butter while it cooks. This is the secret to getting the butter to stay in the breast and ooze out when it is cut into.
Now that you have your chicken breast and you are sure that the breast bone is pretty well intact you can begin. -
Step 2
Turn on your deep fryer to the poultry setting to preheat.

beat your eggs in a large bowl with a small amount of milk. mix your seasonings to your family's individual taste with the flour and put into a large bowl (or zippy bag to shake, either method works equally well)

on the bone side of the chicken you will see where there is a natural separation of the breast meat at the top of the breast bone. Take your finger and push it into this space using care not to tear the chicken. You want to make this space larger to accommodate the butter.

Cut your stick butter into strips lengthwise about 1/4 inch in diameter. Carefully stuff 1 strip into the space you enlarged in the chicken breast. Wash your hands between each one as you do not want the butter on your fingers while you do this. Push the stick all the way down and press the opening closed. set aside till all are done this way.

now dip in the flour to evenly coat, and then the egg and then flour again till you have a nice layer of coating on the chicken piece. Carefully put into basket so that you do not open up the hole that you put the butter into and lower the basket into the oil. Cook for 6 minutes then turn over and cook for another 2 or 3 minutes till done. DO NOT TEST WITH A FORK! forking the chicken will release the butter trapped inside!

Do each piece one at a time to insure that your opening that you put the butter in remains closed and cook as above.

Serve hot with your favorite side dish.
