At your next dinner party serve something that is going to wow the guests and even yourself. This couscous stuffed tomato is great with lamb or beef. Your guests will be asking you how you made it and here is how.

Difficulty: Moderate
Instructions

Things You'll Need:

  • i pkg.. Chicken Flavored Couscous
  • 1-4oz pkg. goat cheese
  • 1/2 red, green, yellow, bell pepper diced
  • 1 large onion, diced
  • 1 tbs. Turmeric
  • 3 lrg. garlic cloves, minced
  • 4 med. tomatoes, hollowed
  • 2 cups chicken stock
  • 2 Tbs. Olive Oil
  • 4 large basil leaves
  • salt and pepper to taste
  1. Step 1

    In a 12 inch skillet, sauté the onions, garlic, and bell pepper in olive oil over medium heat, until soft.
    Prepare couscous on package as specified and instead of using water use hot chicken stock. Add the vegetable mixture to couscous and then add chicken stack and wait 5 minutes. Fluff couscous with fork.

    Begin with the tomatoes by cutting the upper stem portion of the tomato. With a melon baller or spoon remove the seeds and turn upside down onto a paper towel for ten minutes. After moisture is removed start by stuffing the tomato and pack firmly. Filling should be warm. After they are stuffed take the 1 oz of goat cheese and roll into a disk and dip in chopped parsley and sweet basil. Place disk of cheese on top of the tomato. In a high broiler place tomatoes in the broiler for 5 minutes or until it is melted on the inside.

    Serve along the side with a nice piece of lamb or filet mignon for a nice Valentine's Day dinner with a loved one.
