How to Bake a Norwegian Coffee Cake (Kringla)

Norwegian coffee cake filled with your favorite fillings. Very easy to make.

Instructions

Things You'll Need:

  • 1/2 cups butter or margarine
  • 1 cup brown packed sugar
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 cup buttermilk
  • 2 teaspoons 7-Up soda
  • Cake filling of your choice, optional. (i.e. walnuts, blueberries, cram cheese)
  • 3 cups flour
  • 2-1/2 teaspoons baking powder
  • 1 teaspoon salt
  1. Step 1

    In a large mixing bowl, beat the egg and stir in the vanilla, blend well. Add the buttermilk, 7-Up and sift the dry ingredients into this mixture.

  2. Step 2

    Add the rest of the ingredients and mix well. Chill the bowl in the refrigerator over night.

    Refrigeration is important to karlinga making. They must be refrigerated for them to get the flavor. You could bake them without chilling, but the taste will be bland after baking.

  3. Step 3

    Take out the mixture from the fridge, roll small pieces of the dough into long strips, form them into a figure eight; like the shape of a pretzel. Put them on a baking sheet. You can fill and then roll them with your favorite filling, such as cream cheese, oatmeal, jelly, walnuts, raisins, blueberries, etc.

    Place them back into the fridge for about 1-1/2 hours when they have raised a bit in height.

  4. Step 4

    Preheat the oven to 450 degrees F. Bake for 6 - 8 minutes or until light brown. Remove from heat and cool on a rack.

    Serve with milk or coffee. Good for breakfast or afternoon snack.

Tips & Warnings
  • You can omit the egg, your choice.
