Nachos are the Mulligan Stew of finger foods. You can throw anything on top of tortilla chips, melt a little cheese on top and everyone will rave over it. This is how I like to make nachos but I hope you give this your own spin and improvise.

Instructions

Things You'll Need:

  • tortilla chips
  • cheese
  • shredded lettuce
  • diced onions
  • diced tomatoes
  • opt jalapenos
  • sour cream
  • salsa
  • opt beans
  • opt meat
  1. Step 1

    Shred lettuce and make a layer on a larger serving plate or platter. Set aside.

    If you are using meat or beans, heat to very hot in a pan on the stove top. Keep hot.

    Shred cheese with a grater or food processor - or buy it already shredded.

  2. Step 2

    On a baking sheet lay down a layer of tortilla chips one chip thick. Sprinkle chopped onions, tomatoes,jalapenos, and whatever else you want to add over the chips. Spoon some hot meat or beans - or both - over the veggie layer. Sprinkle shredded cheese over the hot meat or beans. Put under the broiler in your oven until the cheese is starting to bubble. Take it out and immediately put another layer of chips on top of the melted cheese. Repeat the veggies, meat and beans. Add more shredded cheese on top and return to the broiler. Let it get good and bubbly.

  3. Step 3

    Remove the pan of nachos from the oven and immediately slide the nachos off the pizza pan onto the platter of shredded lettuce. Put a big dollop of sour cream on top and serve with salsa on the side.

Tips & Warnings
  • Provide lots of napkins.
  • The cheese will be very hot and can burn fingers and lips.
