This recipe sprung forth when it was dinner time and I had absolutely nothing in mind to make. Literally. I opened up the freezer and bags of green beans jumped out at me. Ah, yes. Frozen green beans were on sale. Being the good little budget-savvy homemaker that I am, I bought an embarrassingly massive amount of these guys. It was time to get creative. Here's a recipe that was created in desperation for new ways to push those beans on my poor, unsuspecting family. Nevertheless, this recipe was successful in my house, which is not an easy feat!

Instructions

Things You'll Need:

  • 1 Tablespoon olive oil
  • 1 onion, diced
  • 1+ cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 10-ounce bag frozen green beans
  • 4+ artichoke hearts, chopped
  • 1/2 can black olives, chopped
  • Italian dressing, seasoning, or vinaigrette to season
  • Parmesan cheese, to taste
  1. Step 1

    Heat olive oil in pan. I use a cast iron skillet and stay clear of non-stick pans because of the carcinogenic toxins that they release into the food when heated.

  2. Step 2

    Add remaining ingredients and sauté until the vegetables have reached your desired consistency.

  3. Step 3

    Sprinkle as much or as little Parmesan cheese as you want on the top. You can serve this dish warm or chilled.

Tips & Warnings
  • Making extra for lunches the next day can be a great time-saver.
  • Add other ingredients of your choice. Be creative! Kidney beans taste good in the mix, too.
  • This also freezes well.
