While chorizo usually refers to highly seasoned pork sausage, some people make the sausage with beef, or whatever meat might be abundant at the time. Chorizo originated in Spain, but it's become popular in the U.S. Spice up scrambled eggs with beef chorizo sausage.

    Things You'll Need

    • 1/4 lb. chorizo sausage
    • Onion
    • 5 eggs
    • Oil
    • Salt
      • 1

        Cut onion into small pieces. Crack five eggs in a bowl beat the eggs for about 1 minute. Move eggs to the side.

        Turn stove on medium heat. Add oil to cover the bottom of a nonstick frying pan. Add chopped chorizo and onion. Cook for about 5 minutes until browned, turning frequently.

        Scramble eggs with browned chorizo. Add salt to taste.

    Tips & Warnings

    • This goes great with toast.

    • Stuff a tortilla with filling

    • Try adding some fried potatoes on the side
