This guide will show you how to make a delicious and healthy vegetable soup.

Instructions

Things You'll Need:

  • Large pot
  • 2-3 Cans of Chicken Broth
  • Carrots, Diced Tomatoes, Potatoes, Peas, Corn, etc.
  • Spices, such as Basil, Marjoram, Thyme, Parsley.
  1. Step 1

    Decide now if you are going to use canned beans or dry beans - if using dry beans you will need to cook them in water for about 1 hour. Drain and Rinse the beans before adding them to your soup. You will want to start Step 2 right after you start boiling the beans.

  2. Step 2

    Pour 2 cans of Chicken Broth into the pot. Add the Rice and Barley. You will need to let them cook about 45 minutes.

  3. Step 3

    As the Rice and Barley are cooking, add whatever vegetables you would like. Add the spices to taste.

  4. Step 4

    Add whatever vegetables you would like. I used one can (drained) each of Carrots, Diced Tomatoes, Peas, and Corn, and two cans of potatoes (sliced). You may need to add more Chicken Broth or water.

  5. Step 5

    Once the beans are done, add them. Heat on low for another 5 minutes. It is now ready to serve.

Tips & Warnings
  • You can use fresh vegetables instead of canned. Just remember that some vegetables (like Carrots and Potatoes) will need to be cooked a long time to soften.
  • Using canned beans instead of dry beans is easier.
  • Leftovers will store in the fridge all week long. For longer storage, consider freezing.
  • Add a little tomato juice to give the soup the "vegetable soup" color.
