Things You'll Need:
- Listed Ingredients
- chopping board
- sharp knife
- zester or grater
- big bowl

Step 1
1 cup red leaf lettuce
1 cup iceberg lettuce
1 cup butter lettuce
1 cup spinach
1 medium tomato, chopped
1/3 cup green or black olives
1/2 cup chopped cucumber
1 large handful buckwheat or alfalfa sprouts
1 tablespoon minced celery
1/4 cup carrots cut in fine long slivers with zester or grated
1/4 cup red pepper strips
1/4 cup zucchini cut in fine, long slivers with zester or grated
1/4 cup yellow squash cut in fine, long slivers with zester or grated
3/4 cup crumbled fresh Feta cheese (or substitute same amount grated Jack cheese) -
Step 2
Combine all vegetable ingredients in medium salad bowl.

Add cheese and dressing and toss gently but well. Makes 1 or 2 servings
