A perfect winter soup, filling and flavorful, you'll be glad this double recipe means leftovers! This incredibly easy soup takes only minutes to assemble and requires no stirring! This flavorful recipe has plenty of carrots and garlic that provide some antioxidant power to fuel you through winter. Round off the meal with whole grain crackers, your favorite crusty bread, or parmesan crostini for a hearty and filling meal!

Instructions

Things You'll Need:

  • 16 oz. pkg dried green split peas, rinsed
  • 2 cups diced ham
  • 1 cup sliced carrots
  • 1 cup chopped onion
  • 2 ribs of celery w/leaves
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1/4 cup chopped parsley
  • salt & pepper to taste
  • 6 cups chicken broth
  1. Step 1
     

    After thoroughly rinsing the split peas, layer the ingredients in exactly the order listed. Split Peas, Ham, Carrots, Onion, Celery, Garlic, Bay Leaf, Parsley, and finally, Salt and Pepper to taste.

  2. Step 2
     

    Add the chicken broth last. If you prefer a soup with a lower sodium content, use a low sodium chicken broth. Do not stir the ingredients once you have them layered in the crock pot.

  3. Step 3
     

    This low maintenance dish requires no stirring, just cover your slow cooker and the soup on high 4-5 hours or on low 8-10 hours until the peas are very soft.

Tips & Warnings
  • In place of diced ham, you may also use 1 meaty ham bone or 2 ham hocks.
  • This soup may cause you to go back for seconds!
