Who needs Costco? Make your own!
Who needs Costco? Make your own!

After resisting them several times, I finally broke down and bought a bucket of Aussie Bites at Costco. The foreseen dreaded outcome manifested. We became addicted. Seeing as we live 1.5 hours away from the nearest Costco, the only remedy was to learn how to make them myself (heaven forbid we do without). After some research and experimentation, I concocted this recipe:

Difficulty: Easy
Instructions

Things You'll Need:

  • 4 Mini muffin pans, 2 regular mffin pans, or one 9x13 pan
  • 1 1/2 cups oats
  • 1/2 cup flax seeds
  • 2 cups Whole Wheat Flour (I use spelt)
  • 2/3 cup rapadura (or you can use brown sugar)
  • 1-1/4 cup shredded coconut
  • ½ cup sunflower seeds
  • 1/2 tsp. salt
  • 1/2 tsp. vanilla
  • 1 cup finely chopped dried fruit (apricots, raisins, dates, figs, cranberries, etc. Mixtures are fun, and the food processor is great for this.)
  • ¼ cup honey
  • 1 cup virgin coconut oil
  • 1 teaspoon baking soda
  • 2 tablespoons hot water
  • 3 eggs, beaten
  • an oven
  1. Step 1

    Preheat oven to 350 degrees.

  2. Step 2

    Mix first 8 ingredients (oats-vanilla).

  3. Step 3

Melt honey and coconut oil together.

  4. Step 4

Mix baking soda with hot water and add to coconut oil mixture.

  5. Step 5

Pour coconut oil mixture into dry ingredients, add eggs and mix well.

  6. Step 6

Place mixture into desired pans (lightly greased) and flatten mixture slightly. Bake 10 minutes for mini muffins, 15 minutes for regular muffins, 20-25 minutes for a 9×13 pan at 350 degrees or until golden. Remove from oven and let cool on wire racks. Store in an air-tight container. Enjoy!

Tips & Warnings
  • You may substitute butter for the coconut oil.
