Make the King of Caramel Corn Cracker Jacks

Fresh caramel corn is not only a wonderful treat, but it is Easy! To make! This corn rocks!

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Ingredients
  • 4- Qt’s Popped Popcorn
  • 1-1/2 Cups Brown Sugar
  • 3/4 Cup Light Corn Syrup
  • 1 Cup Spanish Peanuts
  • 6 TB Butter
  • 3 TB Full Flavor Molasses
  • 2 TS Vanilla
  • 1/8 TS Salt
  1. Step 1

    Preheat oven to 250 Degrees.

  2. Step 2

    Evenly spread Popped Popcorn and Spanish Peanuts on cookie sheet and place in oven.

  3. Step 3

    In saucepan combine Brown Sugar, Corn Syrup, Butter, Molasses, Vanilla and Salt in Medium Saucepan.

  4. Step 4

    Bring Mixture to boil and cook until “Soft Crack” (260 Degrees) stage. This takes about 15 minutes.

  5. Step 5

    Remove cookie sheet from oven and pour hot mixture over Popcorn and Peanuts. Mix well and return to oven for 5 Minutes. Remove from oven and mix again. Return to oven for additional 5 minutes. Remove from oven mix a final time and return to oven for additional 5 minutes.

  6. Step 6

    Pull Carmel Corn from oven, transfer to clean cookie sheet and allow to cool 30 minutes. Break up Carmel Corn and Enjoy!

  7. Step 7

    This stuff is a big hit at our home!!
