How to Make Pineapple Ginger Pork Tenderloin

This is an easy, tasty, and relatively healthy way to prepare pork tenderloin. The ginger and pineapple give it a vaguely Hawaiian or Asian feel. We often enjoy it over rice.

Instructions

Things You'll Need:

  • 1 to 1 1/2 lbs. pork tenderloin
  • 1 can crushed pineapple
  • 1 tbsp mustard
  • 1 tbsp fresh ground ginger
  • 1 tbsp lemon juice
  1. Step 1

    Mix everything except the pork up into a glass bowl or shallow pan.

  2. Step 2

    Slice the pork tenderloin about 3/8" thick.

  3. Step 3

    Let the pork marinate in the sauce until you're ready to cook it. The longer you let it soak, the more flavorful it'll be, but it's pretty good even if you don't let it marinate at all.

  4. Step 4

    Cook the pork. For a bit more of a seared flavor, cook it in a cast-iron skillet over medium heat. For a more tender dish but milder flavor, just bake it at 350 F for an hour or so. Either way, cook it long enough to be done through. As long as you don't let it dry out it'll be moist and tender.

Tips & Warnings
  • By far the easiest way to grate fresh ginger is to use a garlic press - much easier than actually grating it! The juice and pulp will come through the holes while the threads will get stuck.
  • I'm not much for measuring, so take the amounts in this recipe as starting points only, and adjust to suit your taste.
