Things You'll Need:
- 36 medium green tomatoes
- 6 medium onions
- 2 sweet green peppers
- 2 sweet red peppers
- 1 hot pepper
- 1 c. water
- 6 c. brown sugar
- 2 c. cider vinegar
- 5 tsp. salt
- 5 tsp. curry powder
- 5 tsp. celery seed
- 8 canning jars with lids

Step 1
Wash and clean vegetables, removing stems, and any spots or blemishes.

Put tomatoes, peppers and onion through coarse blade of chopper or food processor. Put in preserving kettle or canner, or just a big pan that is large enough to hold the ingredients.

Add 1 cup of water, and simmer gently for 15 minutes. Drain well, pressing out all liquid.

Add vinegar, brown sugar, salt, curry powder and celery seed. Bring to a boil. Simmer gently for 5 minutes. Pour into sterile jars, and seal. Sealing is a simple process; you put the relish into the canning jars while it is still really hot. As the relish cools, it sucks the lid down, and seals it. Store in a cool, dry place.
Tastes especially good on hot dogs, hamburgers, or even by the spoonfull.
