Make Easy Green Tomato Relish

A great recipe to use up your green tomatoes at the end of the growing season, and a wonderful sweet relish!

Instructions

Things You'll Need:

  • 36 medium green tomatoes
  • 6 medium onions
  • 2 sweet green peppers
  • 2 sweet red peppers
  • 1 hot pepper
  • 1 c. water
  • 6 c. brown sugar
  • 2 c. cider vinegar
  • 5 tsp. salt
  • 5 tsp. curry powder
  • 5 tsp. celery seed
  • 8 canning jars with lids
  1. Step 1

    Wash and clean vegetables, removing stems, and any spots or blemishes.

  2. Step 2

    Put tomatoes, peppers and onion through coarse blade of chopper or food processor. Put in preserving kettle or canner, or just a big pan that is large enough to hold the ingredients.

  3. Step 3

    Add 1 cup of water, and simmer gently for 15 minutes. Drain well, pressing out all liquid.

  4. Step 4

    Add vinegar, brown sugar, salt, curry powder and celery seed. Bring to a boil. Simmer gently for 5 minutes. Pour into sterile jars, and seal. Sealing is a simple process; you put the relish into the canning jars while it is still really hot. As the relish cools, it sucks the lid down, and seals it. Store in a cool, dry place.
    Tastes especially good on hot dogs, hamburgers, or even by the spoonfull.

Tips & Warnings
  • You could replace the brown sugar with Splenda Brown Sugar Substitute for a sugar free relish.
