This yummy chicken breast recipe is baked, but the salty crushed crackers make it taste fried. Try it, it's really good and very popular with kids.

Instructions

Things You'll Need:

  • Boneless, skinless chicken breasts
  • extra virgin olive oil
  • finely grated cheddar cheese
  • Ritz crackers
  • salt
  • garlic powder
  • black pepper
  1. Step 1

    Thaw four large chicken breasts and cut chicken into several large pieces. Preheat oven to 350 degrees.

  2. Step 2

    In a large mixing bowl, combine the following ingredients: 1/2 cup olive oil, one cup of finely grated cheddar cheese, one cup of finely crushed Ritz cracker crumbs, one teaspoon salt, 1/2 teaspoon garlic powder, and a few dashes of black pepper.

  3. Step 3

    Place thawed chicken pieces in an ungreased glass casserole dish. Press cheese and cracker mixture over the top of the chicken. Bake chicken at 350 degrees for one hour. Halfway through cooking, flip chicken pieces to the other side so both sides bake up crispy.

  4. Step 4

    This goes well with homeade sweet potato fries, raw carrot sticks or fresh corn on the cob. Serve with green mixed salad.

Tips & Warnings
  • Be careful not to over cook or chicken will dry out
