Things You'll Need:

- 1lb. catfish fillets
- 1/2 cup vegetable oil for frying
- 1/2 cup all purpose flour
- 1 egg or 2 egg whites
- 1/2 cup sesame seeds
- (For the dipping sauce)
- 1/4 cup soy sauce
- 3 teaspoons chili pepper flakes
- 3 teaspoons garlic, minced
- 1 teaspoon fresh grated ginger
- 1-1/2 tablespoons brown sugar
- 2 tablespoons sake or white wine

Step 1
Rinse catfish fillets and dry with paper towels. Place flour in a plate or on a piece of waxed paper.
Place egg or egg whites in a separate plate.
Use another dish and sprinkle some sesame seeds. -
Step 2
Dredge both sides of fillets lightly in flour. Then dip fillets in the egg, then coat with sesame seeds.

Heat vegetable oil in a large heavy skillet over medium heat. Carefully, one at a time, place catfish in the hot oil and cook for about 3 minutes per side, or until fish flakes easily when poked with a fork.
Drain on paper towels. -
Step 4
Prepare the dipping sauce in a bowl by mixing garlic, chili flakes, ginger, brown sugar, soy sauce, and white wine (or sake).
Pour the sauce mixture in a small saucepan. Bring to a boil. Reduce heat and simmer for 1-2 minutes. Remove from heat. -
Step 5
Arrange fish fillets on a large plate. Serve fish while hot with sauce spooned over them or in a bowl on the side.
