  • non-fat plain yogurt
  • fresh garlic
  • cucumber
  • extra-virgin olive oil
  • salt & pepper
  • lemon
  • fresh dill

      This sauce is best if you prepare it the night before you plan to use it so the flavors have a chance to blend. Peel and chop a cucumber and one clove of garlic. Place garlic in food processor, pulse a few times to finely chop. Add cucumber, pulse until pureed, but be careful not to liquefy- a cucumber is mostly water.

      Drain water from cucumber/garlic mixture. Use either a cheesecloth or a paper towel. Drain water until you're left with a pulp.

      Transfer cucumber/garlic to a bowl that has a lid. Add one small container of yogurt, 1 tablespoon of lemon juice (don't measure, just slice lemon in half and squeeze a few times) and 1 tablespoon of extra virgin olive oil. Add salt and pepper to taste and stir. Cover and allow to sit in fridge overnight. Before serving, add a tablespoon of chopped fresh dill. Serve with fish, gyros or pitas.
