How to Make a Mean Chicken Lasagna

Lasagna has always been my speciality (if someone who doesn’t LOVE cooking can be said to have a specialty). I can make regular Italian lasagna (with ground beef, sausage or both), Mexican lasagna. vegetable lasagna (not a fan), seafood lasagna (very much a fan). I also dig this chicken lasagna, which can be tailored to your preferences. You can experiment with the veggies, make it healthier, etc.

Instructions

Things You'll Need:

  • 2 cups cooked chicken, chopped
  • 1 cup frozen spinach (thaw and drain) … or you can use asparagus or broccoli
  • 1 can garbanzo beans (if you like them)
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Italian blend cheese
  • ½ small onion, chopped finely and sautéed in a pan with some olive oil and garlic
  • 1 T cornstarch
  • 1 t. black pepper
  • 1 10-ounce can cream of chicken soup (or mushroom)
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 9 lasagna noodles, cooked
  1. Step 1

    Start by preheating your oven to 350 degrees.

  2. Step 2

    Combine the following ingredients in a large bowl: chicken, spinach (or other veggie you enjoy), garbanzo beans (if you like them), cheeses, onion/garlic, cornstarch, pepper, soup, sour cream and mayo.

  3. Step 3

    Spray a 9x13 pan with cooking spray and place a layer of noodles in the pan.

  4. Step 4

    Spread about 1/3 of the chicken mixture over the noodles and repeat twice more.

  5. Step 5

    Bake covered for 30 minutes, then uncovered for 15 more.

  6. Step 6

    Pig out, and enjoy!
