Corned Beef is a favorite of the Irish, and a classic meat for your St. Patrick's Day dinner. Here's an easy recipe for Glazed Corned Beef, a nice alternative to some of the more traditional boiled or baked corned beef recipes.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • 2 1/2 to 3 1/2 lbs Corned beef brisket
  • 2 tsps Dijon mustard
  • 2 tblsps Honey
  • 1 tblsp Orange juice concentrate
  • Water
  • Dutch Oven
  • Small bowl
  • Baking Pan
  1. Step 1

    In a small bowl, whisk together Dijon mustard, honey, and defrosted orange juice concentrate to make a glaze. Set aside.

  2. Step 2

    In a Dutch oven, place your corned beef brisket in the center, and cover the meat completely with water. Cover tightly with a lid and simmer in the oven at 350 degrees for 2-2 1/2 hours. Remove the brisket and transfer to a shallow baking or broiling pan.

  3. Step 3

    Spoon the glaze over the brisket and broil 2-3 minutes until it starts to caramelize. Remove from oven and let stand 10-15 minutes.

    Slice thinly and serve with a variety of vegetables(potatoes, carrots, cabbage) for an authentic St. Patrick's Day feast.

    Serves 6-8 people.

Tips & Warnings
  • Carve brisket diagonally across the grain to achieve thin slices.
  • Leftovers are wonderful in hash, soups, sandwiches, casseroles, and soups!
  • If you don't have a Dutch oven, try a slow cooker or crock pot.
