Chinese Celery Peanut Salad
Chinese Celery Peanut Salad

Many authentic Chinese restaurants serve little bowls of refreshing salads and pickles as complimentary appetizers. They are tangy and sweet and can be very spicy or mild, with the nutty rich aroma of sesame oil.

They are also extremely easy to make, smell great, and lovely to look at. Here's an easy Asian slaw to perk up any meal.

Difficulty: Easy
Instructions

Things You'll Need:

  • 1 tbl sugar
  • 1 tbl distilled white vinegar
  • 1 tsp rice wine or sherry
  • 1 tsp sesame oil
  • 1 cup sliced celery (about two stalks)
  • 1/3 cup of roasted cocktail peanuts
  • Minced garlic, hot pepper flakes optional
  1. Step 1

Mix the sugar, vinegar and sherry together. Stir until the sugar is dissolved. Add sesame oil and stir. If you are going to use minced raw garlic or hot pepper slices, this is the time to add these in, as well.

  2. Step 2

Slice the celery. Inner stalks are best because they are sweeter, but the dressing makes the outer stalks taste good too. I like to slice it about as thick as the peanuts are wide. Similar sizes or shapes not only look nice, but marinate at similar rates.

  3. Step 3

Mix the celery and peanuts with the dressing and let it marinate for between 15 minutes and 2 hours. It will continue to be good for the whole day, but if it sits overnight, it tends to wilt.

Tips & Warnings
  • This is a great potluck dish, because not only is it refreshing, it's just as good at room temperature as cold! (As a matter of fact, warmth unleashes the nutty aroma of the sesame oil.)
