This is a delicious twist on vodka sauce that goes great with any heavier pasta- rigatoni or linguini are my favorites.

Difficulty: Moderately Easy
Instructions

Things You'll Need:

  • Dry pasta of your choice
  • tomato sauce
  • tomato paste
  • fresh basil leaves
  • fresh garlic
  • vodka
  • heavy cream
  • bell pepper
  • extra virgin olive oil
  1. Step 1

    Put pasta water on the stove to boil while you're preparing the sauce. Add salt.

  2. Step 2

    In a large saucepan, sauté a few cloves of garlic and a finely sliced or chopped red bell pepper in about three tablespoons of olive oil. Add one 14 ounce tomato sauce and one small can of tomato paste. If you like the sauce a little thinner, add a second can of tomato sauce. Add salt, pepper, and one bay leaf. Add a generous sprinkle of red pepper flakes if you like a little spice.

  3. Step 3

    Add 1/2 a cup of unflavored vodka. Heat to a boil to cook off alcohol. Cook until sauce is reduced and thickened.

  4. Step 4

    When pasta is nearly ready, add 1/8 cup of the cream. Adjust this depending on if you like the sauce creamier or more tomato based. Chop or tear basil leave and once pasta and sauce is plated, add a generous handful of basil at the end.

Tips & Warnings
  • Add the fresh basil right before eating. It has the most flavor if it is uncooked.
