Things You'll Need:
- ¾ cup sugar
- 3 tbsp all purpose flour
- 2 cups milk
- 3 egg yolks
- 1 tsp vanilla
- ½ stick of butter
- 3 medium sliced bananas
- Vanilla wafers
-
Step 1
Mix together ¾ cup of sugar, 3 tablespoons of all purpose flour and slowly add 2 cups of milk. This should be cooked in the top of a double boiler, but you can cook it over low to medium heat, stirring it constantly until the mixture thickens and do not leave it un-attended.
-
Step 2
Slightly beat 3 egg yolks and temper with a small amount of the hot custard and stir it well. Add the egg mixture to the custard pot and cook for 2 more minutes. Remove it from the heat and add 1 teaspoon of vanilla and ½ stick of butter. Let the mixture cool. In a 13x9 inch casserole dish, alternate the pudding, 3 medium sliced bananas, and the vanilla wafers, beginning with the pudding and ending with the pudding. Add the topping (below) if desired.
-
Step 3
Meringue Topping: Preheat the oven to 350 degrees. Beat 3 egg whites with ¼ teaspoon of cream of tartar and 6 tablespoons of sugar until it becomes stiff. Add 1 teaspoon of vanilla. Spread over the pudding mix; completely seal around the edge. Bake until the desired brownness on the top.
